Most of the people like this vegetable very much. Mix veg is an important food for wedding parties. There is a dish. To make mixed veg, different types of vegetables are mixed, this increases its taste a lot. This is a common vegetable in many homes during the winter season. However, many times the taste of mixed veg prepared at home does not taste like that of parties by following this method you will be able to easily prepare delicious mixed veg. Mix veg is liked not only by adults but also by children, provided it is prepared properly. The specialty of this vegetable is that it can be eaten with roti, naan, or paratha. The biggest and most important thing is that as delicious as mixed veg is, it is equally beneficial for health.
Ingredients for Mix Veg:
Green peas - 100 grams
Beans - 100 grams
Cabbage – 100 grams
Carrot – 1 medium size
Capsicum – 1 medium size
Paneer – 100 grams (if you wish)
Tomatoes – 2-3 medium-sized
Green chilli - 3
Ginger – 1 1/2-inch-long piece
Oil – 2 tbsp.
Asafoetida – 1-2 pinch
Cumin - half teaspoon
Turmeric powder - half teaspoon
Coriander powder – 1 tsp
Salt - as per taste (one teaspoon)
Red chili powder – 1/4th teaspoon
Gram masala – 1/4th teaspoon
Green Coriander – 1 tablespoon
How to make Mixed Veg Recipe:
Wash the vegetables and cut them into small pieces. Cut the cheese into 1cm pieces. Cut into cubes. Wash tomatoes, green chilies, and ginger and grind them in a mixer. Put oil and heat it. Add asafoetida and cumin seeds in oil. After roasting cumin seeds, add turmeric powder and coriander powder. Now add tomato paste and roast the mixture till it gets some graininess. Add all the chopped vegetables, salt, and red chili powder to the roasted spices and fry for 2-3 minutes while stirring with a spoon.
Add one spoon of water, cover the vegetable, and let it cook for 6-7 minutes on low flame. Open the vegetable check it, and stir it with a spoon, the vegetable has not become soft yet. If you feel that the vegetable needs more water to cook, then add one spoon of water, cover the vegetable, and let it cook again on low flame for 3-4 minutes. Now open the vegetables and see that they have become soft. Add pieces of paneer, gram masala, and green coriander to the vegetable (save some green coriander to sprinkle on top of the vegetable) and mix. Your mixed veg vegetable is ready.
Take out the mixed vegetables in a bowl. Garnish by sprinkling green coriander over the vegetables. Serve hot mixed veg vegetables with naan, paratha, chapatti, or rice and eat.
Note; If you want to add onion and garlic to the vegetable, then finely chop one onion and chop 4-5 cloves of garlic, and add cumin after roasting and fry till it turns light pink, add turmeric and coriander powder, add tomato paste and spices. Fry until oil starts floating on the spices. I have taught you to make the rest of the vegetables.
To make it in the restaurant or dhaba style, you will fry all the vegetables little by little in hot oil before cooking them and keep them aside.
While the vegetables are cooking, open the lid occasionally and keep stirring.
This will prevent the vegetables from sticking to the pot. Keep the flame low.
This mixed veg vegetable is made dry.
If you want, you can also make gravy vegetables with it. Add tomato paste for gravy.
