Ingredients used to make Chicken Shami Kebab:-

  1. 1 cup boneless chicken, minced

  2. 1/2 cup chana dal (split Bengal gram), soaked for a few hours

  3. 1 large onion, finely chopped

  4. 2 green chilies, chopped

  5. 1 tablespoon ginger-garlic paste

  6. 1/2 teaspoon turmeric powder

  7. 1 teaspoon red chili powder

  8. 1 teaspoon garam masala

  9. 1/2 teaspoon cumin powder

  10. 1/2 teaspoon coriander powder

  11. Salt, to taste

  12. 2 tablespoons fresh coriander leaves, chopped

  13. 2 tablespoons fresh mint leaves, chopped

  14. 1 egg (optional, for binding)

  15. Oil, for frying

1. Cook Lentils:

    • Boil the soaked chana dal with a pinch of salt until it's soft but not mushy. Drain any excess water.

2. Cook Chicken:

    • In a pan, combine minced chicken, turmeric powder, red chilli powder, salt, and ginger-garlic paste.
    • Cook until the chicken is tender and cooked through. If there's excess moisture, cook until it evaporates.

3. Combine Chicken and Lentils:

    • In a food processor, combine the cooked chicken, boiled chana dal, chopped onions, green chillies, garam masala, cumin powder, coriander powder, fresh coriander leaves, and fresh mint leaves.
    • Blend the mixture until you get a smooth, thick paste. If needed, you can add a beaten egg at this stage to bind the mixture.
4. Shape the Kebabs:
    • Take a portion of the mixture and shape it into a round or oval kebab. Repeat with the remaining mixture.

5. Fry the Kebabs:

    • Heat oil in a pan for shallow frying or deep frying.
    • Fry the kebabs until they are golden brown and cooked through.

6. Serve:

    • Serve Chicken Shami Kebabs hot with mint chutney, yoghurt sauce, or your favourite dipping sauce.
